I saw some guitar players in live clips, where they grab (or bar the strings not to sure) the top part of the neck with their picking hand and then do some intense legato runs with the left. The curiousity is.. why do they grab the top the neck with the right hand?

its basically just to dampen the strings so that they can do legatos without having string noise. but basically its a showoff.

Yes , It's basically to show off, but it's actually easier to mute in case you're playing pure legato.
It could also be reversed tapping.

I have a friend who always does that at gigs. he does it just to show off mainly, but he is muting the strings with his picking hand. looks cool, but it gets old if you really know what he's doing.

Another thing that is done in this manner besides muting the strings is actually fretting them, and do "open string" legato runs.

That's exactly why I put the "open string" between quotation marks.
Your left hand is doing legato runs that include notes that do not require the left hand to fret anything. The notes that are not fretted by the left hand normally are open strings, which is why I refered to it as that, but in this case those notes are simply fretted by the right hand.
Does that make it any clearer?
