How do you determine what note in a scale is what chord? For example, how do I know when to make a 7th or maj7th or minor7th chord? How do I build diminished,augmented chords?

Dominant 7th is built off the 5th tone of the major scale.

Major 7th is built off the 1st and 4th tones of the major scale.

Minor 7th can be the 2nd, 3rd, or 6th.
