Other than recording albums, touring, all the normal stuff, I'd like to build a guitar myself, work on the soundtrack to a video game or movie, and learn the mandolin.

Great question!

I'd like to play one gig up on a big stage. Something like at a State Fair or something.

Lots of stuff! In no particular order:
Record and release an EP/Album on my own
Learn to play more instruments (piano, keyboards and bass guitar are already on the list of instruments to learn in addition to guitar)
Build my own guitars, amp and pedals
Go on tour
Play on a big stage (festivals or headlining tour)

Do I expect to accomplish it all anytime soon? No, but I intend to do as much of it as possible with time.

One of my dreams is to record a simple album of my own songs on which I play every instrument- I'm thinking acoustic and electric guitars, bass (acoustic?), piano, and cajon.

My songwriting and acoustic guitar playing is passable, my electric playing questionable, and my piano and cajon unquestionably bad- guess that I have my work cut out!!

Also on the bucket list:
Have one of my songs recorded by a major artist.
Get paid (not counting free food or beer).
Live on for eternity as a ROCK GOD.
