Changing Pickups

Currently I have a Mexican Fender Fat-Strat and Im thinking of maybe changing the pickups I have in it. Right now I have the factory pickups they have on it when you buy it. I want to know if it would be a good move to take out the humbucker they have in it and change it for something like an EMG pickup. And also I dont know if you can modify the pick guard to fit a different shaped pickup.
