These two-note chords are not the same as regular old double stops - the idea here is to space the notes further apart, so you hear the sound of two distinct voices a lot better.

I think the ones that are the most useful use the root and the major or minor third, placed an octave up. But of course, you can play the root and the fifth too, or just a plain octave, even though that's not really a chord. It sounds good to mix them in there and there though.
