Should it not be G6 C5 D5 as it starts with a G sixth string root power chord and then creates an L by dropping down into fifth root and 2 along?

The number 5 refers to the 5th scale degree, not the 5th string.
G5 is a diad (called a "power chord") & consists of the note G & it's 5th scale degree D.

Likewise for the C5 & D5
C5 is C(1st) & G(5th)
D5 is D(1st) & A (5th)
